Forest Food Fair

Are you a professional chef, a talented cook or a self-confessed foodie? This is your chance to show off your gastronomic skills at the Forest Food Fair on July 25!

Use at least one (1) main ingredient below that is derived from a plant or tree native to the Philippines. Here is a sample list:

Coconut (Cocos nucifera)
Banana (Musa acuminata)
Honey (locally produced only, wild or processed)
Labong (Bambusa sp.)
Santol (Sandoricum koetjape)
Kang kong (Ipomoea aquatica)
Saluyot (Corchurus olitorious L.)
Ube (Dioscorea alata)
Gabi (Colocasia esculenta)
Alugbati (Basella alba)
Himbabao (Broussonetia Luzonica)
Upo (Lagenaria siceraria)
Patola (Luffa cylindrical)
Okra (Abelmoschus esculentus)
Pako (Diplazium esculentum)

Food category and Drink category!

4 contestants will compete in the Food category and 4 for the Drink category. One winner in each category will win a Forest Gift Basket and a certificate of appreciation!

What should I make?

For the Food category you can make anything from cakes, empanada, pancit, lumpia, etc.. For the Drink category you can make anything from shakes, teas etc… Be creative! Examples include: Adobong kang kong, puto ng ube, banana shake, pinakbet with okra, sotanghon with upo soup, laing, ube jam, turon, etc.


Bring enough to serve at least 30 people.
Your creation must be prepared prior to Festival and ready to serve upon arrival. No stoves or ice boxes will be available on site.
Your creation must contain at least one (1) main ingredient from plants or trees native to the Philippines.
For Food: “Forest-friendly” tissue will be provided for tasters, but if your recipe is a dish requiring a plate (pancit, adobo, etc…) bring at least 30 re-usable mini plastic plates to help organizers minimize garbage.
For Drinks: Plastic cups will be provided for you (tasters will be asked to place cups inside a specific bin to be recycled for urban gardens).
Judging using the below criteria will be combined with votes from the general public to determine the winners from each category (Food & Drink).

Relevance to Theme 40%
Creativity & Originality 30%
Taste 15%
Presentation 15%
Total = 100%
Public vote + judge criteria will determine each winner from Food category and Drink category.
